Combine all Ribs ingredients in a bowl and rub evenly over the ribs.
Wrap the ribs tightly in aluminum foil and bake for 2.5 - 3 hours, or until tender.
While ribs are baking, combine all Sauce ingredients in a saucepan. Bring to a simmer over medium heat and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
Remove ribs from oven and unwrap. Brush generously with Sauce.
Increase oven temperature to 350°F (175°C).
Return ribs to the oven, uncovered, and bake for another 15-20 minutes, brushing with Sauce every 5 minutes, until sauce is caramelized and sticky.
Let rest for 10 minutes before serving.
