Instructions
Heat Olive Oil in a large Dutch oven over medium-high heat.
Add Wagyu Ground Beef and Spanish Chorizo and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add Spanish Onion, Poblano Pepper, and Jalapenos to the pot and cook until softened, about 8-10 minutes.
Stir in Ancho Chili Powder, Guajillo Chili Powder, Cumin, Smoked Paprika, Garlic Powder, Cayenne Pepper (if using), Salt, and Black Pepper. Cook for 2 minutes more, stirring constantly.
Add San Marzano Tomatoes, Heirloom Kidney Beans, Heirloom Black Beans, Homemade Beef Stock, and Tomato Paste to the pot. Bring to a boil, then reduce heat and simmer for at least 2 hours, stirring occasionally.
Stir in Sherry Vinegar and Mexican Chocolate during the last 30 minutes of simmering. Stir until chocolate is melted.
Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
