Instructions
Heat Vegetable Oil in a large pot or Dutch oven over medium-high heat.
Add Ground Beef and Chorizo and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add Yellow Onion, Red Bell Pepper, and Jalapenos to the pot and cook until softened, about 5-7 minutes.
Stir in Chili Powder, Cumin, Smoked Paprika, Garlic Powder, Cayenne Pepper (if using), Salt, and Black Pepper. Cook for 1 minute more, stirring constantly.
Add Crushed Tomatoes, Kidney Beans, Black Beans, Beef Broth, and Tomato Paste to the pot. Bring to a boil, then reduce heat and simmer for at least 45 minutes, or up to 1.5 hours, stirring occasionally.
Stir in Apple Cider Vinegar and Dark Chocolate during the last 15 minutes of simmering. Stir until chocolate is melted.
Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
