Instructions
  1. Roast Poblano peppers over an open flame or under a broiler until the skin is blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel, seed, and dice.
  2. Dice the Jalapeño pepper, removing seeds for less heat.
  3. Combine all Cheese ingredients in a medium saucepan.
  4. Add all Liquid ingredients to the saucepan.
  5. Stir in roasted Poblano peppers, diced Jalapeño, and all Flavor ingredients.
  6. Cook over medium-low heat, stirring constantly, until the cheese is melted and smooth. Do not boil.
  7. Serve immediately with tortilla chips.
