Instructions
  1. Season Pork shoulder with chipotle powder, cumin, oregano, and salt. Sear pork in a Dutch oven until browned on all sides. Add enough water to cover the pork, bring to a boil, then reduce heat and simmer for 3-4 hours, or until pork is very tender. Shred the pork.
  2. Combine all Chipotle Crema ingredients in a food processor and blend until smooth.
  3. In a separate bowl, combine Asadero cheese, Oaxaca cheese, black olives, roasted corn, and pickled jalapeños.
  4. Spread a generous layer of Chipotle Crema on one side of each tortilla. Sprinkle half of the tortilla with cheese mixture and top with shredded pork. Fold the tortilla in half.
  5. Heat avocado oil in a large cast iron skillet over medium heat. Cook quesadillas for 4-5 minutes per side, or until golden brown and cheese is melted.
