Instructions
  1. In a large bowl, combine all Filling ingredients. Mix well.
  2. In a separate bowl, prepare the Sauce by combining all Sauce ingredients. Stir until smooth.
  3. Place about 1/4 cup of the filling in the center of each eggroll wrapper.
  4. Moisten the edges of the wrapper with water. Fold the sides in, then roll tightly to form an eggroll.
  5. Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  6. Fry the eggrolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove the eggrolls from the oil and drain on paper towels.
  8. Serve immediately with the cilantro-lime dipping sauce.
