Instructions
  1. In a bowl, whisk together all Marinade ingredients.
  2. Place the Wagyu steak in a resealable bag or container and pour the marinade over it. Marinate for at least 4 hours, or up to 24 hours in the refrigerator.
  3. While the steak marinates, prepare the Pineapple Salsa: Grill or char the pineapple cubes until slightly caramelized. Combine the charred pineapple, red onion, jalapeño, cilantro, and lime juice in a bowl. Set aside.
  4. Prepare the homemade corn tortillas according to your preferred recipe.
  5. Heat a cast-iron pan over high heat until smoking hot.
  6. Remove the steak from the marinade and discard the marinade. Sear the steak for 2-3 minutes per side for medium-rare, or longer for desired doneness.
  7. Remove the steak from the skillet and let it rest for 10-15 minutes before slicing against the grain.
  8. Add the sliced onions, bell peppers, and poblano pepper to the skillet and cook until softened and slightly charred, about 5-7 minutes.
  9. Warm the corn tortillas.
  10. Serve the sliced steak and vegetables with warm tortillas, pineapple salsa, queso fresco, and pickled red onions.
