Chipotle Chicken Nachos
A step up from the standard version, featuring a homemade chipotle marinade and a blend of cheeses for a richer flavor.

A step up from the standard version, featuring a homemade chipotle marinade and a blend of cheeses for a richer flavor.
Instructions
- Combine all Chicken Marinade ingredients in a bowl. Add chicken and marinate for at least 30 minutes.
- Preheat oven to 375°F (190°C).
- Bake marinated chicken for 20-25 minutes, or until cooked through. Shred the chicken with two forks.
- Prepare the Sauce by combining all Sauce ingredients in a small bowl. Mix well.
- Spread tortilla chips on a baking sheet.
- Top chips with shredded chicken, Monterey Jack cheese, cheddar cheese, black beans, red onion, jalapeños, and corn.
- Bake for 5-7 minutes, or until cheese is melted and bubbly.
- Drizzle with Chipotle Sauce. Garnish with sour cream, guacamole, and cilantro. Serve immediately.
