Instructions
  1. Line a baking sheet with parchment paper.
  2. Melt the semi-sweet chocolate chips in a double boiler or microwave in 30-second intervals, stirring until smooth. Spread evenly onto the prepared baking sheet.
  3. Chill in the refrigerator for 10 minutes, or until set but not hard.
  4. Melt the white chocolate chips in a double boiler or microwave in 30-second intervals, stirring until smooth. Stir in the peppermint extract.
  5. Pour the white chocolate over the semi-sweet chocolate and spread evenly.
  6. Immediately sprinkle the crushed peppermint candies over the white chocolate.
  7. Chill in the refrigerator for at least 20 minutes, or until completely set. Break into pieces to serve.
