Instructions
  1. Combine all Vegetables in a large bowl.
  2. In a saucepan, combine all Brine ingredients. Bring to a boil, stirring until sugar and salt are dissolved.
  3. Pour the hot brine over the vegetables. Stir well to coat.
  4. Let cool completely, then transfer to sterilized jars. Refrigerate for at least 24 hours before serving to allow flavors to meld.
  5. For best flavor, allow to sit for several days before consuming.
