Instructions
  1. Combine all Vegetables in a large bowl.
  2. In a saucepan, combine all Brine ingredients. Bring to a boil, stirring until sugar is dissolved.
  3. Pour the hot brine over the vegetables. Stir well to coat.
  4. Let cool completely, then transfer to sterilized jars. Refrigerate for at least 48 hours before serving to allow flavors to meld.
  5. For best flavor, allow to sit for up to a week before consuming.
