Instructions
- Combine all Vegetables in a large bowl.
- In a saucepan, combine all Brine ingredients. Bring to a boil, stirring until sugar is dissolved.
- Pour the hot brine over the vegetables. Stir well to coat.
- Let cool completely, then transfer to sterilized jars. Refrigerate for at least 48 hours before serving to allow flavors to meld.
- For best flavor, allow to sit for up to a week before consuming.
