Instructions
Prepare the Salted Caramel Sauce: In a saucepan, combine Granulated Sugar and Water. Cook over medium heat, without stirring, until amber in color. Carefully whisk in Heavy Cream and Butter. Bring to a simmer and cook for 1 minute. Remove from heat and stir in Fleur de Sel. Set aside.
In a shallow dish, whisk together the French Toast ingredients: Egg Yolks, Heavy Cream, Vanilla Bean Paste, Cinnamon, and Cardamom.
In a separate shallow dish, combine the Churro Coating ingredients: Turbinado Sugar, Cinnamon, and Cloves.
Dip each slice of Challah Bread into the French Toast mixture, ensuring both sides are coated.
Immediately dredge the soaked bread into the Churro Coating, pressing gently to adhere.
Roll up each coated bread slice tightly.
Heat Clarified Butter in a large skillet over medium heat.
Cook the French Toast Rollups for 4-5 minutes per side, or until golden brown and cooked through.
Drizzle generously with the Salted Caramel Sauce and sprinkle with a pinch of Fleur de Sel before serving.
