Instructions
- Combine all Fajita Seasoning ingredients in a small bowl.
- Rub Fajita Seasoning all over Chicken thighs. Marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat. Add Chicken and cook until fully cooked, about 8-10 minutes. Remove from skillet and set aside.
- Add Veggies to the same skillet and cook until softened and slightly charred, about 7-8 minutes.
- Combine all Sauce ingredients in a small bowl and mix well.
- Warm tortillas according to package directions.
- Spread a thin layer of Sauce onto each tortilla. Add Chicken, Veggies, and Cheese. Roll up tightly.
- Serve immediately.
