Instructions
  1. In a bowl, combine all Chicken ingredients and marinate for at least 15 minutes.
  2. While chicken marinates, prepare the Lime Dressing. Whisk together all Lime Dressing ingredients in a small bowl until emulsified.
  3. Heat a large skillet over medium-high heat. Add the marinated Chicken and cook until fully cooked, about 6-8 minutes. Remove from skillet and slice.
  4. In the same skillet, add the Bell pepper and Onion. Cook until softened and slightly charred, about 5-7 minutes.
  5. In a large bowl, combine the Romaine lettuce, cheddar cheese, black beans, and corn.
  6. Add the cooked Chicken and sautéed Bell pepper and Onion to the salad.
  7. Pour the Lime Dressing over the salad and toss to combine.
  8. Top with tortilla strips and serve immediately.
