Copycat Applebee's Chicken Fajita Salad

A flavorful and satisfying salad replicating the popular Applebee's dish, made with accessible ingredients and straightforward techniques.
Instructions
- In a bowl, combine all Chicken ingredients and marinate for at least 15 minutes.
- While chicken marinates, prepare the Lime Dressing. Whisk together all Lime Dressing ingredients in a small bowl until emulsified.
- Heat a large skillet over medium-high heat. Add the marinated Chicken and cook until fully cooked, about 6-8 minutes. Remove from skillet and slice.
- In the same skillet, add the Bell pepper and Onion. Cook until softened and slightly charred, about 5-7 minutes.
- In a large bowl, combine the Romaine lettuce, cheddar cheese, black beans, and corn.
- Add the cooked Chicken and sautéed Bell pepper and Onion to the salad.
- Pour the Lime Dressing over the salad and toss to combine.
- Top with tortilla strips and serve immediately.
