Instructions
  1. Cut chicken thighs into small, bite-sized pieces.
  2. In a bowl, marinate the chicken with 1 tbsp soy sauce, grated ginger, minced garlic, and red pepper flakes. Let it sit for 15 minutes.
  3. While chicken marinates, prepare the Sauce by combining sweet chili sauce, 2 tbsp soy sauce, rice vinegar, sesame oil, and hoisin sauce in a small bowl. Set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked, about 7-9 minutes.
  5. Pour the Sauce over the cooked chicken and stir to coat. Cook for another 3-4 minutes until the sauce thickens slightly.
  6. Fry wonton wrappers in vegetable oil until golden brown and crispy. Drain on paper towels.
  7. Fill each fried wonton wrapper with the chicken mixture, shredded carrots, shredded purple cabbage, green onions, and toasted sesame seeds.
  8. Serve immediately.
