Instructions
  1. In a bowl, whisk together all Marinade ingredients.
  2. Place chicken breasts in a resealable bag or container and pour marinade over them. Marinate for at least 30 minutes, or up to 4 hours.
  3. Grill or pan-fry chicken breasts until cooked through (internal temperature reaches 165°F / 74°C).
  4. While chicken is cooking, prepare the Cheese Sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened. Remove from heat and stir in cheddar cheese and cayenne pepper until melted and smooth.
  5. In a separate bowl, combine Sour cream, Lime juice, and Chili powder for the Sauce.
  6. Pour Cheese Sauce and Sauce over cooked chicken breasts.
  7. Garnish with chopped cilantro and diced red onion. Serve immediately.
