Instructions
- In a small bowl, whisk together all Sauce ingredients until smooth.
- Heat Vegetable Oil in a large skillet or wok over medium-high heat.
- Add Shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add Broccoli, Carrots, Red Bell Pepper, and Onion to the skillet and stir-fry for 5-7 minutes, until tender-crisp.
- Pour Sauce over the vegetables and bring to a simmer, stirring constantly, until thickened (about 1-2 minutes).
- Return Shrimp to the skillet and toss to coat with the sauce.
- Stir in Cashews.
- Serve immediately over Cooked White Rice.
