What You'll Need

Equipment: Large skillet or wok, Small bowl, Whisk Shop these items →
Instructions
  1. In a small bowl, whisk together all Sauce ingredients until smooth.
  2. Heat Vegetable Oil in a large skillet or wok over medium-high heat.
  3. Add Shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add Broccoli, Carrots, Red Bell Pepper, and Onion to the skillet and stir-fry for 5-7 minutes, until tender-crisp.
  5. Pour Sauce over the vegetables and bring to a simmer, stirring constantly, until thickened (about 1-2 minutes).
  6. Return Shrimp to the skillet and toss to coat with the sauce.
  7. Stir in Cashews.
  8. Serve immediately over Cooked White Rice.
