Instructions
  1. Cut chicken into bite-sized pieces. In a bowl, toss chicken with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes. Set aside.
  3. In a medium bowl, combine all Sauce ingredients. Mix well.
  4. In a separate bowl, combine Monterey Jack cheese, Cheddar cheese, green onions, and black olives.
  5. Preheat oven to 350°F (175°C).
  6. In an oven-safe skillet (cast iron preferred), layer the cheese mixture, then the cooked chicken. Pour the sauce evenly over the chicken.
  7. Bake for 10-15 minutes, or until the cheese is melted and bubbly. If you have a broiler, broil for 1-2 minutes to get a golden brown top.
  8. Serve immediately with tortilla chips.
