Instructions
Cut chicken into bite-sized pieces. In a bowl, toss chicken with olive oil, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper, salt, and pepper.
Heat a skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes. Set aside.
In a medium bowl, combine all Sauce ingredients. Mix well.
In a separate bowl, combine Monterey Jack cheese, Asadero cheese, roasted red bell peppers, green onions, and black olives.
Preheat oven to 350°F (175°C).
In an oven-safe skillet (cast iron preferred), layer the cheese mixture, then the cooked chicken. Pour the sauce evenly over the chicken.
Bake for 10-15 minutes, or until the cheese is melted and bubbly. If you have a broiler, broil for 1-2 minutes to get a golden brown top.
Garnish with fresh cilantro and serve immediately with tortilla chips.
