Instructions
  1. Preheat oven to 375°F (190°C).
  2. Prepare the Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes to create a roux. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes. Stir in Nutmeg and season with salt and White Pepper.
  3. In a large bowl, combine wilted Spinach, Artichoke Hearts, Garlic, and Shallots.
  4. Pour the Cheese Sauce over the vegetable mixture and stir to combine.
  5. Gently fold in the Cheese Blend.
  6. Transfer the mixture to a baking dish.
  7. Bake for 25-30 minutes, or until bubbly and golden brown.
  8. Sprinkle with a pinch of Cayenne Pepper before serving. Serve hot with crusty bread or crostini.
