Instructions
  1. In a large pot, combine 6 cups of water and the dried sassafras root. Bring to a boil, then reduce heat and simmer for 60 minutes to extract the flavor.
  2. Strain the sassafras tea through a fine-mesh sieve, discarding the root.
  3. While the sassafras tea simmers, make the vanilla bean syrup: In a small saucepan, combine 1/2 cup water, granulated sugar, and the split vanilla bean and scrapings. Bring to a simmer, stirring until sugar is dissolved. Remove from heat and let steep for 30 minutes. Remove vanilla bean.
  4. Combine the sassafras tea, vanilla bean syrup, Root Beer Extract, Wintergreen Extract, and Licorice Root Powder in a large pot.
  5. Heat gently, stirring to combine. Let cool completely.
  6. Pour the root beer base into a large pitcher or bottles.
  7. Gently stir in the chilled Club Soda or Sparkling Water just before serving. Do not shake.
  8. Serve chilled over ice.
