Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together all Chocolate Cake ingredients until combined. Gradually add hot coffee and mix until smooth.
- Pour batter evenly into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- To make the Chocolate Mousse, beat Cream cheese and sugar until smooth. Gradually add Heavy cream and beat until fluffy. Stir in melted chocolate and Vanilla extract.
- To make the Ganache, heat Heavy cream in a saucepan until simmering. Pour over chocolate chips and let sit for 1 minute. Stir until smooth.
- Level cake layers if needed. Place one layer on a serving plate and spread with half of the Chocolate Mousse. Top with the second layer and spread with remaining mousse.
- Pour Ganache over the top of the cake, allowing it to drip down the sides. Refrigerate for at least 2 hours before serving.
