1/4 cup Red miso paste
2 tbsp Dry sake
1 tbsp High-quality soy sauce

Instructions
  1. Prepare the Miso Glaze: In a small bowl, whisk together all Miso Glaze ingredients until smooth. Let sit for 15 minutes to allow flavors to meld.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Place Salmon fillets skin-side down on the prepared baking sheet. Brush the Miso Glaze generously over the top of each fillet. Marinate for 10 minutes.
  4. While salmon marinates, prepare the Bok Choy: Heat Vegetable oil in a large skillet over medium-high heat. Add Garlic and sauté for 30 seconds until fragrant. Add Bok Choy and sauté for 3-5 minutes, until tender-crisp.
  5. Bake salmon for 12-15 minutes, or until cooked through and flakes easily with a fork.
  6. Serve salmon immediately with sautéed Bok Choy. Garnish with Green onions and Black sesame seeds.
