A premium take on the classic sliders, featuring Wagyu beef, slow-cooked onions, and a house-made sauce. Served on toasted brioche buns with aged cheddar.
Instructions
  1. In a bowl, gently combine all Beef ingredients. Form into small, loose patties, slightly larger than the brioche roll halves. Avoid overworking the meat.
  2. Slow-cook the Onions. Melt Butter in a Dutch oven over low heat. Add Yellow onion and cook, stirring occasionally, until deeply caramelized and golden brown, about 45-60 minutes. Deglaze with Dry sherry during the last 10 minutes, stirring in Brown sugar and Thyme.
  3. Prepare the Sauce by combining all Sauce ingredients in a small bowl and mixing well.
  4. Slice the brioche rolls in half horizontally. Spread the Sauce on both halves of the rolls.
  5. Cook the beef patties in a cast iron skillet over medium-high heat for 2-3 minutes per side, aiming for medium-rare to medium doneness.
  6. Place a beef patty on the bottom half of each roll. Top with slow-cooked Onions and a slice of Aged cheddar cheese.
  7. Cover with the top half of the roll. Brush the tops of the rolls with clarified Butter.
  8. Toast the sliders under a broiler for 1-2 minutes, or until the cheese is melted and the rolls are golden brown.
