In a bowl, combine all Beef ingredients and mix gently. Form into small patties, slightly larger than the brioche roll halves.
Cook the beef patties in a skillet over medium-high heat until browned and cooked through, about 4-6 minutes. Drain any excess grease.
While the beef is cooking, caramelize the Onions. Melt Butter in a skillet over medium heat. Add Yellow onion and cook, stirring occasionally, until softened and caramelized, about 15-20 minutes. Stir in Brown sugar and Balsamic vinegar during the last 5 minutes.
Prepare the Sauce by combining all Sauce ingredients in a small bowl and mixing well.
Slice the brioche rolls in half horizontally. Spread the Sauce on both halves of the rolls.
Place a beef patty on the bottom half of each roll. Top with caramelized Onions and a slice of Sharp cheddar cheese.
Cover with the top half of the roll. Brush the tops of the rolls with melted Butter.
Bake in a preheated oven at 350°F (175°C) for 5-10 minutes, or until the cheese is melted and the rolls are golden brown.
