Instructions
- Prepare the Sushi Rice: Rinse the sushi rice until the water runs clear. Cook the rice with water in a rice cooker or pot according to package directions. Once cooked, gently mix in rice vinegar, sugar, and salt. Let cool slightly.
- Make the Spicy Tuna Mix: In a bowl, combine the drained tuna, mayonnaise, sriracha, sesame oil, garlic powder, and onion powder. Mix well.
- Prepare Spicy Mayo Sauce: Combine mayonnaise and Sriracha in a small bowl. Set aside.
- Assemble the Roll: Place a nori sheet on a bamboo sushi rolling mat. Spread half of the sushi rice evenly over the nori, leaving a small strip bare at the top edge.
- Arrange Filling: Layer half of the avocado slices and half of the julienned cucumber over the rice.
- Add Tuna: Add half of the spicy tuna mixture over the avocado and cucumber.
- Roll: Using the bamboo mat, tightly roll the sushi from the bottom up. Moisten the bare edge of the nori with water to seal the roll.
- Repeat: Repeat steps 4-7 for the second roll.
- Slice and Serve: Using a sharp knife, slice each roll into 6-8 pieces. Top with Spicy Mayo sauce and sesame seeds.
- Serve immediately with soy sauce.
