Instructions
Pound chicken thighs to an even thickness of about 1/2 inch. Place chicken in a zip-top bag. Combine all Marinade ingredients and pour over chicken. Marinate for at least 8 hours, or up to 24 hours.
In a shallow dish, combine all Breading ingredients.
Remove chicken from marinade and dredge in breading mixture, ensuring it is fully coated. Press the breading onto the chicken to adhere well.
Heat about 1 inch of peanut oil in a Dutch oven over medium-high heat to 350°F (175°C).
Fry chicken in batches for 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F / 74°C). Drain on a wire rack.
While chicken is frying, combine all Sauce ingredients in a small bowl.
Lightly toast potato rolls.
Spread Sauce on both halves of the buns. Place fried chicken on the bottom bun, top with shredded iceberg lettuce and bread and butter pickle chips, and cover with the top bun. Serve immediately.
