Instructions
  1. Cut chicken thighs into 1-inch pieces.
  2. In a bowl, combine all Brine ingredients. Add chicken and brine for at least 2 hours, or up to 8 hours.
  3. In a separate bowl, combine all Breading ingredients.
  4. Remove chicken from brine and pat dry. Dredge in the breading mixture, ensuring each piece is fully coated.
  5. Heat Peanut oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
  6. Fry chicken in batches for 4-5 minutes, or until golden brown and cooked through.
  7. Remove nuggets and place on a wire rack to drain excess oil. Serve immediately.
