Instructions
  1. Peel the Vidalia onion, leaving the root intact. Carefully separate the layers, creating a 'blossom' shape. Gently press to loosen layers.
  2. Prepare the Batter: In a chilled bowl, whisk together Rice Flour, Cornstarch, White Pepper, and Sea Salt. Gradually whisk in chilled Sparkling Water and White Wine until just combined. Do not overmix. The batter should be light and airy.
  3. Heat Peanut Oil in a large, heavy-bottomed pot to 375°F (190°C).
  4. Dip the onion blossom into the Batter, ensuring it's fully coated. Work quickly to maintain batter temperature.
  5. Carefully lower the battered onion into the hot oil and fry for 2-3 minutes, or until golden brown and exceptionally crispy. Monitor oil temperature closely.
  6. Remove the onion blossom from the oil and place it on a wire rack lined with paper towels to drain.
  7. While the onion is draining, prepare the Dipping Sauce by combining Aioli, Black Truffle Oil, Smoked Paprika, and Cayenne Pepper in a small bowl.
  8. Serve the Awesome Blossom immediately with the Dipping Sauce.
