A luxurious take on the Big Mouth Burger, featuring Wagyu beef, artisanal pepper jack, house-made sauce, and a toasted pretzel bun.
Instructions
  1. In a bowl, gently combine Wagyu ground beef, Fleur de sel, and freshly ground black pepper. Form into 4 patties, being careful not to overwork the meat.
  2. Prepare the Sauce by combining all Sauce ingredients in a small bowl and mixing well.
  3. Caramelize the onions: Heat a skillet over medium heat. Add the sliced onion and balsamic glaze. Cook, stirring occasionally, for 25-30 minutes, or until deeply caramelized.
  4. Heat a grill or skillet over medium-high heat. Grill or cook the patties for 3-4 minutes per side for medium-rare, or longer to desired doneness.
  5. During the last minute of cooking, top each patty with 2 slices of Artisanal pepper jack cheese and allow to melt.
  6. Toast the Pretzel buns.
  7. Spread Sauce on both halves of each bun. Place arugula, heirloom tomato slices on the bottom bun. Add the cheeseburger patty and caramelized onions. Top with the other bun half and serve immediately.
