  1. Gently combine all Burger Patties ingredients in a bowl. Form into 8 small, loosely packed patties. Avoid overworking the meat.
  2. Heat a cast-iron skillet over medium-high heat. Sear the patties for 3-4 minutes per side for medium-rare, adjusting time for desired doneness.
  3. During the last minute of cooking, top each patty with a slice of aged white cheddar cheese and allow to melt.
  4. Prepare the Sauce by combining all Sauce ingredients in a small bowl. Taste and adjust seasoning.
  5. Lightly toast the potato rolls. Spread a generous amount of Sauce on both halves of each roll.
