In a bowl, gently combine all Burger Patties ingredients. Form into 8 small patties, being careful not to overwork the meat.
Cook the patties in a skillet over medium-high heat for about 4-5 minutes per side, or until cooked to desired doneness.
While the patties are cooking, prepare the Sauce by combining all Sauce ingredients in a small bowl and mixing well. Taste and adjust seasoning as needed.
Lightly toast the Brioche slider buns.
Spread a generous amount of Sauce on both halves of each slider bun. Top with a cooked patty, a slice of cheddar cheese, diced pickles, and diced white onion.
Cover with the top bun and serve immediately.
