Instructions
  1. Cut chicken thighs into 1-inch pieces.
  2. In a bowl, combine all Marinade ingredients. Add chicken and marinate for at least 30 minutes.
  3. In a saucepan, combine diced mango with 1/4 cup water. Simmer until mango is softened, about 5-7 minutes. Blend until smooth and set aside.
  4. In a separate bowl, whisk together mango puree, Rice vinegar, Honey, Soy sauce, Sriracha, Garlic, Ginger, and Red pepper flakes.
  5. Heat a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 7-9 minutes.
  6. Pour Sauce over chicken and bring to a simmer. Cook for 3-4 minutes, or until sauce has thickened slightly.
  7. Garnish with Green onions and Toasted sesame seeds. Serve immediately with rice.
