Instructions
  1. Gently form the Wagyu ground beef into 4 patties, seasoning only with Fleur de sel and freshly ground black pepper. Avoid overworking the meat.
  2. Prepare the Sauce by combining aioli, smoked paprika, and sherry vinegar in a small bowl.
  3. Cook the bacon until crispy. Reserve the bacon fat.
  4. Grill or pan-fry the burger patties in the reserved bacon fat for 3-4 minutes per side for medium-rare, adjusting to desired doneness.
  5. During the last minute of cooking, place a slice of Aged cheddar cheese on each patty to melt.
  6. Lightly toast the pretzel burger buns.
  7. Spread Sauce on both halves of each bun.
  8. Assemble the burgers: bottom bun, butter lettuce, heirloom tomato, burger patty with cheese, pickled red onion, 2 slices of bacon, top bun.
  9. Serve immediately.
