Copycat Chili's Ultimate Bacon Burger
A gourmet take on the classic, featuring a Wagyu beef patty, artisanal bacon, aged cheddar, house-made sauce, and a pretzel bun.
Instructions
- Gently form the Wagyu ground beef into 4 patties, seasoning only with Fleur de sel and freshly ground black pepper. Avoid overworking the meat.
- Prepare the Sauce by combining aioli, smoked paprika, and sherry vinegar in a small bowl.
- Cook the bacon until crispy. Reserve the bacon fat.
- Grill or pan-fry the burger patties in the reserved bacon fat for 3-4 minutes per side for medium-rare, adjusting to desired doneness.
- During the last minute of cooking, place a slice of Aged cheddar cheese on each patty to melt.
- Lightly toast the pretzel burger buns.
- Spread Sauce on both halves of each bun.
- Assemble the burgers: bottom bun, butter lettuce, heirloom tomato, burger patty with cheese, pickled red onion, 2 slices of bacon, top bun.
- Serve immediately.
