Instructions
  1. Preheat oven to 325°F (163°C).
  2. In a saucepan, sauté shallots and garlic in a little olive oil until softened. Deglaze with red wine and reduce by half. Let cool.
  3. In a large bowl, combine all Meatloaf ingredients, including the wine reduction. Mix gently but thoroughly.
  4. Shape the mixture into a loaf and place in a loaf pan.
  5. In a small bowl, whisk together all Glaze ingredients.
  6. Spread half of the Glaze over the meatloaf.
  7. Bake for 75 minutes. Spread the remaining Glaze over the meatloaf and bake for another 30-45 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let rest for 15 minutes before slicing and serving.
