Instructions
- Preheat oven to 325°F (163°C).
- In a saucepan, sauté shallots and garlic in a little olive oil until softened. Deglaze with red wine and reduce by half. Let cool.
- In a large bowl, combine all Meatloaf ingredients, including the wine reduction. Mix gently but thoroughly.
- Shape the mixture into a loaf and place in a loaf pan.
- In a small bowl, whisk together all Glaze ingredients.
- Spread half of the Glaze over the meatloaf.
- Bake for 75 minutes. Spread the remaining Glaze over the meatloaf and bake for another 30-45 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 15 minutes before slicing and serving.
