Sauté the shallot and garlic in olive oil until translucent. Let cool.
In a large bowl, combine all Meatloaf ingredients, including the cooled shallot and garlic. Mix gently but thoroughly.
Shape the mixture into a loaf and place in a loaf pan.
In a saucepan, combine all Glaze ingredients. Simmer for 30 minutes, stirring occasionally, until slightly thickened.
Pour half of the Glaze over the meatloaf.
Bake for 90 minutes. Pour the remaining Glaze over the meatloaf and bake for another 30-60 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 15 minutes before slicing and serving.
