Instructions
Make Fries: Soak potato fries in cold water for 1 hour. Dry thoroughly and fry twice in Duck Fat: once at 300°F (150°C) for 8-10 minutes, then again at 375°F (190°C) for 3-4 minutes until golden and crispy. Season with sea salt.
Make Spread: In a small bowl, combine all Spread ingredients and mix well. Set aside.
Make Grilled Onions: Melt Butter in a skillet over medium heat. Add Vidalia Onions and cook, stirring frequently, until deeply caramelized, about 25-30 minutes. Deglaze the pan with Dry Sherry and cook for another 2-3 minutes. Set aside.
Place Fries on a serving platter.
Top Fries with Cheese slices, allowing them to melt slightly from the heat of the fries.
