Instructions
  1. Make Fries: Soak potato fries in cold water for 1 hour. Dry thoroughly and fry twice in Duck Fat: once at 300°F (150°C) for 8-10 minutes, then again at 375°F (190°C) for 3-4 minutes until golden and crispy. Season with sea salt.
  2. Make Spread: In a small bowl, combine all Spread ingredients and mix well. Set aside.
  3. Make Grilled Onions: Melt Butter in a skillet over medium heat. Add Vidalia Onions and cook, stirring frequently, until deeply caramelized, about 25-30 minutes. Deglaze the pan with Dry Sherry and cook for another 2-3 minutes. Set aside.
  4. Place Fries on a serving platter.
  5. Top Fries with Cheese slices, allowing them to melt slightly from the heat of the fries.
  6. Drizzle generously with Spread.
  7. Sprinkle with Grilled Onions. Serve immediately.
