Instructions
  1. Season the short ribs generously with salt and pepper. Sear in a Dutch oven with olive oil until browned on all sides. Remove and set aside.
  2. Brown the ground beef in the same pot. Drain off any excess grease.
  3. Add the Sofrito ingredients, including pancetta, to the pot and cook until softened, about 10-12 minutes.
  4. Deglaze the pot with the Barolo wine, scraping up any browned bits. Let the wine reduce by half.
  5. Return the short ribs to the pot. Stir in the Sauce ingredients. Bring to a simmer, then reduce heat to low, cover, and braise for at least 3-4 hours, stirring occasionally. The longer it braises, the more tender the beef and flavorful the sauce will become.
  6. Remove the short ribs and shred the meat. Return the shredded meat to the sauce.
  7. Stir in the Finishing ingredients during the last 15 minutes of cooking. Add butter for richness.
  8. Serve hot over fresh pasta, garnished with additional Parmigiano-Reggiano cheese.
