Instructions
In a large pot or Dutch oven, brown the Beef over medium-high heat. Drain off any excess grease.
Add the Sofrito ingredients to the pot and cook until softened, about 8-10 minutes.
Deglaze the pot with the red wine, scraping up any browned bits from the bottom. Let the wine reduce by half.
Stir in the Sauce ingredients. Bring to a simmer, then reduce heat to low, cover, and simmer for at least 2 hours, stirring occasionally. The longer it simmers, the more flavorful it will become.
Stir in the Finishing ingredients during the last 15 minutes of cooking. Add butter for richness.
Serve hot over your favorite pasta, garnished with additional Parmesan cheese.
