Instructions
  1. Prepare the Sauce: Heat Olive oil in a saucepan over medium heat. Add Garlic and cook until fragrant, about 30 seconds. Stir in Crushed tomatoes, Dried oregano, Sugar, and Red pepper flakes. Bring to a simmer and cook for 20 minutes, stirring occasionally. Stir in Fresh basil during the last 5 minutes of cooking.
  2. Prepare the Chicken: Pound Chicken breasts to 1/2 inch thickness. In a shallow dish, combine Flour, Salt, and Pepper. In another dish, whisk Eggs. In a third dish, combine Panko breadcrumbs, Parmesan cheese, Garlic powder, and Italian seasoning.
  3. Dredge each Chicken breast in Flour, then dip in Egg, and finally coat with Breadcrumbs, pressing to adhere.
  4. Heat 1/4 inch of oil in a large skillet over medium-high heat. Cook Chicken breasts for 3-4 minutes per side, or until golden brown and cooked through.
  5. Place cooked Chicken breasts in a baking dish. Top each breast with Sauce, then arrange Fresh mozzarella slices over the sauce, and sprinkle with Parmesan cheese.
  6. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.
