Equipment: Large pot or Dutch oven, Cutting board, Knife, Measuring cups and spoons Shop these items →
Instructions
  1. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Diced Onion, Diced Carrots, and Diced Celery to the pot and cook until softened, about 5-7 minutes.
  3. Add Garlic-minced and cook for 1 minute more, until fragrant.
  4. Stir in Diced Tomatoes-undrained, Kidney Beans-drained and rinsed, Cannellini Beans-drained and rinsed, Chopped Green Beans, and Frozen Peas.
  5. Pour in Vegetable Broth and add Dried Oregano, Dried Basil, and Red Pepper Flakes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add Small Pasta-such as ditalini and continue to simmer until pasta is tender, about 8-10 minutes.
  7. Season with Salt and Black Pepper to taste.
  8. Serve hot, garnished with Fresh Parsley-chopped and Grated Parmesan Cheese.
