Instructions
**Vegetable Broth:** Combine all Vegetable Broth ingredients in a large pot. Bring to a boil, then reduce heat and simmer for 45 minutes. Strain broth and discard solids.
Heat Olive Oil in a large pot or Dutch oven over medium heat.
Add Diced Onion, Diced Carrots, and Diced Celery to the pot and cook until softened, about 5-7 minutes.
Add Garlic-minced and cook for 1 minute more, until fragrant.
Stir in Crushed Tomatoes, Cannellini Beans-drained and rinsed, Chopped Green Beans, and Chopped Zucchini.
Pour in Homemade Vegetable Broth and add Dried Oregano, Dried Basil, and Red Pepper Flakes. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add Small Pasta-such as ditalini and continue to simmer until pasta is tender, about 8-10 minutes.
Stir in Pesto just before serving.
Season with Salt and Black Pepper to taste.
Serve hot, garnished with Fresh Parsley-chopped and Grated Parmesan Cheese.
