Instructions
- Cook the Rigatoni pasta according to package directions. Drain and set aside.
- Prepare the Sausage Filling: Remove sausage from casings and cook in a skillet over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease. In a large bowl, combine the cooked sausage, Ricotta cheese, Parmesan cheese, Egg, Italian seasoning, Salt, and Black pepper. Mix well.
- Prepare the Tomato Sauce: In a large saucepan, melt the Butter over medium heat. Add the Garlic and cook for 1 minute until fragrant. Stir in the Crushed tomatoes, Heavy cream, Sugar, Italian seasoning, Salt, and Black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Stuff the Rigatoni: Carefully stuff each rigatoni tube with the Sausage Filling. This is easiest done with a small spoon or piping bag.
- Combine and Serve: Add the stuffed rigatoni to the Tomato Sauce and gently toss to coat. Simmer for 5-10 minutes to heat through. Serve immediately, garnished with extra Parmesan cheese if desired.
