Instructions
  1. Season Chicken with salt and pepper.
  2. Grill or pan-fry chicken breasts until cooked through (internal temperature of 165°F / 74°C).
  3. While chicken is cooking, prepare the Mushroom Sauce: Melt Butter in a large skillet over medium heat.
  4. Add Mushrooms and Garlic to the skillet and cook until softened, about 5-7 minutes.
  5. Deglaze the pan with Dry sherry, scraping up any browned bits from the bottom.
  6. Stir in Heavy cream, Mayonnaise, Worcestershire sauce, and Thyme. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  7. Season the Mushroom Sauce with Salt and Pepper to taste.
  8. Place cooked chicken breasts on plates.
  9. Pour Mushroom Sauce over each chicken breast.
  10. Sprinkle with Shredded Monterey Jack cheese and serve immediately.
