Instructions
- In a small bowl, combine Olive oil, Smoked paprika, Garlic powder, Salt, and Pepper. Rub mixture all over Chicken breasts.
- Grill or pan-fry chicken breasts until cooked through (internal temperature of 165°F / 74°C).
- While chicken is cooking, prepare the Mushroom Sauce: Melt Butter in a large skillet over medium heat.
- Add Mushrooms and Garlic to the skillet and cook until softened and browned, about 7-10 minutes.
- Deglaze the pan with Dry sherry, scraping up any browned bits from the bottom.
- Stir in Heavy cream, Mayonnaise, Worcestershire sauce, Dijon mustard, and Thyme. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Season the Mushroom Sauce with Salt and Pepper to taste.
- Place cooked chicken breasts on plates.
- Pour Mushroom Sauce over each chicken breast.
- Sprinkle with Shredded Monterey Jack and Parmesan cheese and serve immediately.
