A more flavorful version of the Outback-inspired mac and cheese, using sharper cheeses and a touch of spice.
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cook Pasta according to package directions. Drain and set aside.
  3. Toss Chicken Thighs with Olive Oil, Smoked Paprika, and Garlic Powder. Grill or pan-fry until cooked through. Cut into bite-sized pieces and set aside.
  4. In a large saucepan, melt Butter from Cheese Sauce group over medium heat. Whisk in Flour and cook for 2-3 minutes to create a roux.
  5. Gradually whisk in Milk and Heavy Cream from Cheese Sauce group until smooth. Bring to a simmer, stirring constantly.
  6. Reduce heat to low and stir in Salt, Pepper, and Cayenne Pepper from Cheese Sauce group. Add Sharp Cheddar, Gruyere, and Parmesan Cheese from Cheese Sauce group, stirring until melted and smooth.
  7. Combine cooked Pasta and Chicken with Cheese Sauce. Pour into a greased 9x13 inch baking dish.
  8. In a small bowl, combine Panko Bread Crumbs, Melted Butter, and Parmesan Cheese from Topping group. Sprinkle over the mac and cheese.
  9. Bake for 25-30 minutes, or until golden brown and bubbly.
