Slow-Roast Chicken: Preheat oven to 300°F (150°C). Rub Chicken thighs with Olive oil, Rosemary, Thyme, Salt, and Pepper. Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C). Let rest and shred.
Prepare Sauce: In a small saucepan, combine San Marzano tomato sauce, Sun-dried tomatoes, Balsamic vinegar, Honey, and Garlic. Simmer over low heat for 15 minutes, stirring occasionally.
Assemble Panini: Spread Sauce on the inside of the Ciabatta rolls. Layer with Baby spinach, shredded Chicken, and Buffalo mozzarella.
Grill Panini: Brush the outside of the bread with olive oil. Grill in a panini press or skillet over medium heat for 4-6 minutes per side, or until golden brown and cheese is melted and bubbly.
