To prepare Roasted Garlic, slice off the top of the garlic head to expose the cloves. Drizzle with Olive Oil. Wrap tightly in aluminum foil and roast for 30-40 minutes, or until cloves are soft and golden.
Let the roasted garlic cool slightly, then squeeze out the roasted garlic cloves into a small bowl.
Combine all Sauce ingredients, including the Roasted Garlic, in a food processor or blender.
Process until completely smooth and creamy.
Taste and adjust seasoning as needed. Add more salt, pepper, or lemon juice to your preference.
Refrigerate for at least 1 hour to allow flavors to meld. This sauce is best served chilled.
