Instructions
  1. Combine Brine 1 ingredients and dissolve salt and sugar. Submerge chicken thighs and brine for 4 hours.
  2. Remove chicken from Brine 1, rinse, and pat dry. Combine Brine 2 ingredients and marinate chicken for another 2 hours.
  3. Whisk together all Breading ingredients.
  4. Remove chicken from marinade and dredge in Breading mixture, ensuring it's fully coated.
  5. Heat about 1 inch of oil in a large skillet over medium-high heat.
  6. Fry the chicken for 7-10 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C).
  7. While chicken is frying, prepare biscuits: Combine flour, baking powder, baking soda, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined. Gently pat dough to 1-inch thickness and cut out biscuits.
  8. Bake biscuits at 400°F (200°C) for 12-15 minutes, or until golden brown.
  9. In a small bowl, combine all Sauce ingredients to make the sauce.
  10. Once chicken is cooked, let it drain on paper towels.
  11. Split each biscuit in half and spread with Sauce. Add a fried chicken thigh to each biscuit and serve immediately.
