Instructions
Combine Brine 1 ingredients and dissolve salt and sugar. Submerge chicken thighs and brine for 4 hours.
Remove chicken from Brine 1, rinse, and pat dry. Combine Brine 2 ingredients and marinate chicken for another 2 hours.
Whisk together all Breading ingredients.
Remove chicken from marinade and dredge in Breading mixture, ensuring it's fully coated.
Heat about 1 inch of oil in a large skillet over medium-high heat.
Fry the chicken for 7-10 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C).
While chicken is frying, prepare biscuits: Combine flour, baking powder, baking soda, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined. Gently pat dough to 1-inch thickness and cut out biscuits.
Bake biscuits at 400°F (200°C) for 12-15 minutes, or until golden brown.
In a small bowl, combine all Sauce ingredients to make the sauce.
Once chicken is cooked, let it drain on paper towels.
Split each biscuit in half and spread with Sauce. Add a fried chicken thigh to each biscuit and serve immediately.
