Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Potatoes with 1 tablespoon Old Bay seasoning and Fleur de sel.
  3. Spread Potatoes in a single layer on a large baking sheet.
  4. Roast Potatoes for 20 minutes.
  5. While Potatoes are roasting, prepare the Clarified Butter Sauce: In a saucepan, sauté Shallots in 2 tablespoons of clarified butter until translucent. Deglaze with white wine and reduce by half. Stir in remaining clarified butter, Lemon juice, Tarragon, Smoked paprika, and Cayenne pepper.
  6. After 20 minutes, add Chorizo and Corn to the baking sheet with the Potatoes. Drizzle with half of the Clarified Butter Sauce.
  7. Continue roasting for another 15 minutes.
  8. Add Lobster tails to the baking sheet. Drizzle with the remaining Clarified Butter Sauce.
  9. Roast for an additional 10-15 minutes, or until Lobster is cooked through and opaque.
  10. Serve immediately, garnished with fresh tarragon.
